inspired by yet another pinterest pin (seriously, have you checked it out yet? ) i started making these super easy breakfast cupcakes a few weeks ago after seeing several variations online. when it comes to most of my cooking, i tend to improvise because inevitably i have forgotten an ingredient, or it isn't readily available etc. i love that these cupcakes are versatile - you can make them with whatever you have on hand, as long as you have eggs and bacon. i usually make mine with kale or spinach, and ALWAYS add cheese, but you can use whatever vege you like. they are perfect for eating on the go too!
ingredients
3-4 medium to large eggs, beaten (per 6 cupcakes)
6 bacon slices (streaky bacon for those in the UK)
a couple of handfuls of chopped kale, or any vege you fanc
a handful of feta cheese, or any cheese you fancy

sea salt and pepper to taste
directions:
1. preheat the oven to 400 F/ 200C
2. line the muffin tins with the bacon.
3. mix together the remaining ingredients and scoop into the molds.
4. bake between 15-20 mins or until golden brown on top, depending on your oven.
